Elven Lembas Bread – Recipe

Legolas: Lembas bread.  One small bite will fill the stomach of a grown man.
Merry: How many did you eat?
Pippin: Four.


For our Lord of the Rings movie night we needed a treat.  What could be more perfect than Elven Lembas bread?!  One bite of Lembas bread is supposed to fill a grown man’s stomach for the rest of the day.  When I found the recipe I knew I had to try it out.

Elven Lembas Bread
2 1/2 c flour
1 T baking powder
1/4 t salt
8 T cold butter
1/3 c sugar
2/3 c milk
1/2 t lemon extract

Preheat oven to 425 degrees.

Mix flour, baking soda, and salt in a large bowl.  Chop butter into mixture with a pastry cutter or knead in with your fingers until you get a crumbly mixture.  Add sugar and mix.  Add milk and lemon extract and stir with a fork until dough forms.

Roll the dough out 1/2 inch thick.  Cut out 3 inch squares and transfer to a cookie sheet (I sprayed mine lightly).  Criss-cross each square from corner to corner with a knife.  Bake for about 12 minutes or until set and lightly golden.  Makes 12-16.

My girlies gobbled them up!  I loved them too.  They were not too sweet and had a light lemon flavor.  My husband said they were strangely satisfying (how fitting).
